Frozen honey BBQ chicken strips with yellow saffron rice, freshly chopped salsa (plum tomatoes, green onions, lime juice), and steamed broccoli. It was a decent lunch. More than anything, I'm just glad I already had all the ingredients I needed in the kitchen.
This wasn't my first option for lunch, but I settled on it because I'm trying to cut back a little on expenditures and, more importantly, it's too hot outside. Between the options of getting in my hot car or not getting in my hot car, I prefer the latter. I'm like a Food Vampire; I only leave my (air-conditioned) sanctuary and forage for nourishment after the sun has already set.
